Minestrone soup!
Had to make my own version!
Ina adds squash to hers to call it Winter Minestrone. I call it “whatever veggies in the fridge minestrone”!
Zucchini, yellow squash, carrots, green pepper, red onion, handful of mixed green, mushrooms and a potato along with cooked white beans and tomato broth. It took 3 minutes cook time in instant pot. Topped the soup with sprinkle of sea salt, black pepper, red pepper flakes, Parmesan cheese and touch of EVOO! Yumm..!
Served with salad and jack cheese croutons, it was a fresh, light, feel good dinner!
