New Year, New Food!

Happy New Year! Beautiful way to start a new year...in the garden!

I’m so grateful for Mother Nature’s gifts. My winter garden is growing beautiful Lettuce, Cabbage, broccoli, cauliflower, carrots, radishes and lots of herbs.

Salad greens, parsley, basil are ready to be harvested. I made “Pan-Fried Caprese Salad with Lemon Vinaigrette”!

Herbs and greens are tossed with a simple lemon vinaigrette along with a slices of ripe sweet tomatoes. Topped it with Flash fried breaded mozzarella. Warm, crunchy, gooey mozzarella with cold juicy tomatoes and lemony greens is a bite of heaven!

Another perfect lunch!
