When life gives me Zucchini, I make soup!
Not just soup...It’s summer caputered in a bowl!
Zucchini, Poblano Peppers and Spinach soup With Cheesy Herby Toast Fingers for dipping
In the instant pot, Sauté some onion and garlic for few seconds. Add chopped zucchini, poblano peppers, 1 potato. Mix Add some water, salt and pepper.
Pressure cook on high for 5 minutes. Natural release pressure.
Blend in a blender along with couple handfuls of fresh spinach. Blend till creamy and smooth.
Drizzle with a bit of cream, sprinkle over any fresh herbs - I used oregano.
