Eggless “Mandarin Orange-Vanilla” cupcakes sitting pretty on Santa’s belly!
This recipe was a request for a bride-to-be’s Bridal Shower who has dietary restrictions to eggs. I paired this recipe with a simple orange-vanilla buttercream. These turned out moist, tender and they smell soooo good!
I followed Ina’s recipe but since we love the combination of orange and vanilla I added my own variation.
To the cake batter I added: - about 1 TBSP of orange zest - 1/2 tsp of orange extract - 1 small can of chopped drained mandarins
To the frosting I added: More zest and juice instead of milk.
Soooo delicious! These came out tender and moist!
